Auriga Research Pvt Ltd conducted FoSTaC training for Advance Catering at ‘The Lodhi’ in New Delhi. The participants of this training program were chefs and food handlers working with this esteemed organisation. This one-day training program comprised of presentations, on hand tasks and demonstrations and evaluation at the end.
Other training programs were conducted at Delhi Milk Scheme (DMS) plant and at Model Dairy plant, NDRI Karnal. Auriga Research conducted the training in these two places on 6 and 7 April, 2021. Food technologists, members of the production and quality control team undertook this training under the FoSTaC training course: Special – Milk & Milk Products.
Auriga Research is empanelled as an FoSTaC training partner and they facilitate the Food Safety Supervisor trainings for individuals working in the food industry.
The FoSTaC Food Safety Supervisor courses have been divided into three levels. The basic level training courses are meant for small food businesses which includes Street Food Vending, Catering, Retail and Distribution. The Advanced training courses are for State and Central Licensed food businesses which include Catering, Manufacturing, Storage & Transport and Retail & Distribution. The third layer of courses, known as Special training courses, have been developed for high-risk food businesses or for food businesses which requires special attention. The special training courses include; Milk & Milk Products, Meat & Poultry, Fish & Seafood, Packaged Water, Bakery (Level 1), Bakery (Level 2), Edible Fats and Oils.
The guidelines of the Food Safety Training and Certification (FoSTaC) envisage, that all food businesses that have either Central License or State License, should have at least one trained and certified “Food Safety Supervisor” for every 25 food handlers in each of their premises. These trained supervisors would carry out periodic training of all food handlers in the premises and maintain records of food safety audit and inspections. Accordingly, Auriga is fully geared to provide this training for the Food Safety Supervisor Certification Course.

The FoSTaC programme is prominently a capacity building initiative of FSSAI with the core idea to build the capacities of trained food handlers. All FBOs can send food safety personnel for training and any individual who is willing to start a food business can register for a Food Safety Supervisor Course.
