Arjuna Launches Natural Preservative to Extend Frying Cycle of Veg Oils
Arjuna Naturals Extracts Ltd has launched a natural preservative to extend the frying cycle of vegetable oils. The degradation in frying oil occurs quickly due to the higher temperature, oxidative degradation, and hydrolytic rancidity which cause unpleasant flavors, odors and change in color in the oil as well as the foods fried in it. Arjuna Naturals research and development (R&D) team has successfully developed a natural preservative that can help maintain vegetable oil color, taste and functionality even at high temperatures and does not negatively affect the fried product. The new formulation contains a few simple ingredients, is GMO-free, oil soluble and vegan.
The FSSAI has also revised its standards for reuse of vegetable oil in frying and cooking till it reaches maximum total polar compound (TPC) limit of 25 percent. Any vegetable oil that crosses this threshold will not be considered safe to use. Arjuna’s natural preservative formulation slows down the oxidative degradation due to reuse and so the oil can be used safely for more times. Food processors will be able to fry an increased number of product batches per liter of oil, with delayed TPC development and decreased time to rancidity, which will also prove to be economic for them. The initial response to the formulation has been so strong that Arjuna Naturals Extracts Ltd has decided to immediately market this natural solution worldwide.
